Soak Your Grains
Rodd Stockwell, MD
Most grains, nuts, and seeds have natural preservatives that interfere with healthy digestion. A few simple changes in your kitchen will greatly increase your food's nutritional value to your body.
If you are making oats for breakfast, for example, place them on the counter the night before in water with a little lemon juice. Rolled oats, steel cut oats, or oat groats work best. In the morning, add in salt, butter or coconut oil, and heat. They will cook faster and the preservatives naturally found in this part of the plant will be neutralized.
This works for beans, too. Many people notice stomach upset, bloating or passing gas due to the preservatives in beans. Soaking beans overnight greatly increases the digestibility of the beans. Your body, and perhaps your housemates, will thank you.
